Life can get busy, and sometimes you just don’t have hours to spend in the kitchen crafting a fancy dessert. When you need to make a last-minute dessert without any hassle or host a last-minute dinner party, these quick desserts will save the day.

The 5-Minute Chocolate Mug Cake

A warm, gooey Chocolate Mud Cake that’s quicker to make than scrolling through Instagram! Rich, indulgent, and irresistibly soft, this dessert is the perfect treat for any chocolate lover. Whip it up in minutes and satisfy your sweet tooth without the wait!

Ingredients:

  • 30 gm all-purpose flour
  • 15 gm unsweetened cocoa powder
  • 50 gm granulated sugar
  • 5 gm baking powder
  • 60 ml milk (full-fat or plant-based)
  • 15 ml vegetable oil (or melted butter)
  • 5 ml vanilla extract
  • A pinch of salt
  • Optional: a handful of chocolate chips or a square of dark chocolate for extra gooeyness

Procedure:

  1. In a large microwave-safe mug, first whisk together the flour, cocoa powder, sugar, baking powder, and salt. Since this is a quick recipe for mug cake, there’s no need for separate bowls.
  2. Wet it down by adding the milk, oil, and vanilla extract. Stir until the batter is smooth and lump-free. Add a few chocolate chips for extra decadence.
  3. Pop the mug into the microwave on high for 60-90 seconds. The cake should rise and still be slightly gooey in the center, giving the cake a rich texture.
  4. Let it cool for a minute or two and then dive in your mug cake and enjoy. The catch about this recipe is, you can make it anytime you want.

Lazy Lemon Posset

Lemon posset sounds fancy, but it’s essentially a silky-smooth citrus custard made with just three ingredients. The texture is as smooth as a Chocolate Pudding, and the taste is a blend of sweet and citrus.

Ingredients:

  • 300 ml heavy cream
  • 75 gm granulated sugar
  • 40 ml fresh lemon juice
  • Zest of 1 lemon

Procedure:

  1. Heat things up: Pour the cream into a saucepan, add the sugar, and bring to a gentle simmer over medium heat. Stir occasionally until the sugar dissolves completely.
  2. Lemon magic: Remove from heat and whisk in the lemon juice and zest. The citrus will work its mysterious alchemy, thickening the cream.
  3. Chill: Pour the mixture into small serving glasses (ramekins, if you’re feeling fancy), and refrigerate for at least two to three hours until set.
  4. Garnish and serve: Top with fresh berries or a sprig of mint. Your guests will think you slaved over this posset for hours, but we both know better.

No-Bake Oreo Cheesecake Bites

These Oreo cheesecake bites are proof that good things come in small packages. If you are an Oreo maniac, serve yourself a glass of Oreo Shake with these cheesecake bites.

Ingredients:

  • 150 gm Oreo cookies (crushed)
  • 60 gm melted butter
  • 200 gm cream cheese (at room temperature)
  • 50 gm powdered sugar
  • 5 ml vanilla extract
  • 100 ml heavy cream (whipped)

Procedure:

  1. Take a zipper bag and fill it in with Oreo cookies. Zip the bag and crush the cookies to powder. You can also use a grinder if you wish the process to be quick. In a bowl, combine the crushed Oreos with melted butter. Press the mixture into the bottom of a lined muffin tin or small glasses to form the base.
  2. Beat the cream cheese, powdered sugar, and vanilla extract together until the mixture turns smooth and creamy.
  3. Gently fold in the fluffy whipped cream until the mixture is light and airy.
  4. Spoon the cream cheese mixture onto the Oreo base, smoothing the tops. Make sure that the base has set properly, before pouring the cream cheese mixture.
  5. Refrigerate for at least 1-2 hours. Garnish with whipped cream or cherries, anything that you prefer.

Berry Fool

This delightfully named treat is a British classic. While it may make you feel fancy, it’s the easiest recipe to follow.

Ingredients:

  • 200 ml heavy cream
  • 50 gm powdered sugar
  • 200 gm mixed berries (any or all berries you like)
  • 10 gm lemon zest

Procedure:

  1. Toss the berries you love the most with a bit of powdered sugar and lightly mash with a fork. You want some chunky bits for texture.
  2. In a separate bowl, whisk the cream and the rest of the powdered sugar until soft peaks form. Do not whisk the cream for too long, or it might end up as butter clumps.
  3. Gently fold the mashed berries and lemon zest into the whipped cream, creating a marbled effect. It tastes as pretty as it looks.

Spoon into bowls or glasses of your choice (wine glasses or martini glasses) and serve immediately, or refrigerate for a couple of hours if you want it chilled. You can also garnish it with fresh berries on top.
