1. Ras Malai

Ingredients:
For the small rasgullas:
- 1 lt full-fat milk
- 30 ml lemon juice
- 200 gm sugar
- 1 lt water
For the flavored milk:
- 1 lt milk
- 50 gm sugar
- 1 gm cardamom powder
- 10 gm chopped pistachios
- 10 gm chopped almonds
- 10-12 strands of saffron
Procedure:
- Boil the milk first. Once it is boiled, turn off the heat and add the lemon juice in the warm milk. Stir gently until the milk curdles. Strain it using a cheesecloth and rinse with cold water to remove the flavor of lemon. Then squeeze out the excess water. This is how you make the chhena, the base of the sweet.
- Kneed the chena on a flat surface for 5-7 minutes until it becomes smooth and non-sticky. Now make small balls out of the chhena.
- In a deep pot, combine the 1 lt water and 200 gm sugar. Bring it to a boil then add the small chhena balls into the pot. Let it cook for 7-8 minutes on medium heat. Once it is done, remove the pot from the oven and let them cool.
- In another heavy-bottomed pan, add another 1 lt of milk to prepare the flavored milk. On low heat, keep stirring the milk and reduce the milk to half of its volume.
- Then add the sugar, cardamom powder, and saffron strands. Mix them well and simmer for 5 minutes.
- Now squeeze the small rasgullas from the syrup to get rid of excess syrup and gently add them to this flavored milk.
- Allow the rasgullas to be soaked into the flavored milk for 1 hour and then refrigerate them.
- Before serving, garnish with chopped nuts.
2. Gajar ka Halwa
Another special dish for Dhanteras is gajar ka halwa which is an easy-to-make dessert at home. This sweet flavorful dessert has an amazing texture because of the softened carrots. - 500 gm Grated carrots
- 500 ml Full-fat milk
- 150 gm Sugar
- 50 gm Ghee

Procedure:
- Cooking Carrots: In a heavy-bottomed pan, add grated carrots and full-fat milk. Cook on medium heat until the milk reduces and thickens (about 30-40 minutes).
- Adding Sugar and Ghee: Once the milk has evaporated, add sugar and ghee. Mix well and cook for another 10 minutes.
- Flavoring: Stir in cardamom powder and add chopped nuts and raisins. Cook for another 5 minutes.
- Serving: Transfer to a serving dish and garnish with extra nuts. Serve warm or at room temperature.
3. Rasgulla with Kesar Syrup
The classic Bengali dish is one of the most popular desserts across the country. Let’s give it a twist to this classic dessert by adding saffron to the syrup. Ingredients:
- 500 gm Chenna (Paneer)
- 400 gm Sugar
- 1 lt Water
- A pinch of Saffron strands
- 15 ml Rose water
- 15 ml Lemon juice
Procedure:
- Making Chenna: Boil 1 liter of milk in a heavy pot. Once it boils, add lemon juice to curdle the milk. Stir gently until the whey separates. Strain the mixture through a muslin cloth and rinse under cold water to remove the sour taste.
- Kneading: Knead the chenna for about 10 minutes until it becomes smooth and pliable.
- Forming Rasgullas: Make small balls (about 20 gm each) from the kneaded chenna.
- Preparing the Syrup: In a pot, combine sugar and 1 liter of water. Bring it to a boil, stirring until the sugar dissolves. Add saffron strands and rose water to the syrup.
- Cooking Rasgullas: Gently drop the chenna balls into the boiling syrup. Cover and cook for about 15 minutes on medium heat. The balls will double in size.
- Cooling: Once cooked, let the rasgullas cool in the syrup. Serve chilled.
4. Besan Laddoo with a Twist

Procedure:
- Roasting the Besan: In a heavy-bottomed pan, heat the ghee on low flame. Add the besan and roast it, stirring continuously until it turns golden brown and emits a nutty aroma (about 15-20 minutes).
- Mixing Ingredients: Remove the pan from heat and let it cool slightly. Once warm, add powdered sugar, cardamom powder, grated coconut, chopped nuts, and golden raisins. Mix well until combined.
- Forming Laddoos: Allow the mixture to cool enough to handle. Grease your palms with a little ghee and form small balls (ladoos) using the mixture.
Serving: Let the ladoos cool completely and store them in an airtight container. Enjoy with family and friends!
