Ingredients

  • 200g digestive biscuits, crushed
  • 100g melted butter
  • 500g cream cheese
  • 200ml heavy cream
  • 100g powdered sugar
  • 4 tbsp Thandai powder, homemade or store-bought
  • 1 tsp rose water
  • 1/4 tsp saffron strands soaked in 2 tbsp warm milk
  • 2 tbsp chopped pistachios
  • Edible rose petals for garnish

Method:

  1. Mix crushed digestive biscuits with melted butter until they stick together and create a firm base. Press into the base of a springform pan to form the crust. Chill in the refrigerator for 30 minutes.
  2. Beat cream cheese in a mixing bowl until smooth. Gradually add powdered sugar and continue beating until well combined.
  3. Beat the heavy cream till stiff and soft-peaks forms. Then gently fold this whipped cream with the cream cheese mixture, to give a smooth consistency.
  4. Now mix the cheesecake mixture by adding Thandai powder, rose water, and saffron milk. Mix them well so that spices get evenly mixed in the cheesecake mixture.
  5. Pour the cheesecake mixture on the prepared crust. Use a spatula to even out the mixture on the crust. Refrigerate it for 6 hours minimum or until it gets set like a cheesecake.
  6. Once set, take the cheesecake out of the pan and garnish with chopped pistachios and edible rose petals. Serve chilled to relish the combination of tradition and modernity.
