Ingredients:

  • 113.5 gm unsalted butter, softened
  • 100 gm granulated sugar
  • 110 gm lightly packed light brown sugar
  • 59.15 ml buttermilk
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 ½ teaspoon pure vanilla extract
  • 250 gm all-purpose flour
  • 2 teaspoons homemade apple pie spice
  • ½ teaspoon salt
  • 250 gm shredded, peeled apple (about 4 medium or 2 large)
  • 81.75 gm chopped pecans
  • 60.61 gm dried cranberries

For the streusel topping:

  • 55 gm lightly packed light brown sugar
  • 22.5 gm all-purpose flour
  • ¼ teaspoon homemade apple pie spice
  • 28 gm unsalted butter
  • 36.33 gm chopped pecans

Directions:

  • Preheat the oven to 350°F or 177°C.
  • Grease a loaf pan and set aside.
  • In a bowl, add the butter and beat with a handheld mixer or a stand mixer with a paddle attachment. Then add in both the sugars and beat until they are fully dissolved. Then add the buttermilk and baking powder and mix more. Next, add the eggs, one at a time, and the vanilla. Beat until everything is thoroughly incorporated. Set aside.
  • In a bowl, add the flour, apple pie spice, and salt and whisk until mixed properly. Now slowly add this mixture to the bowl with the other ingredients and slowly mix until well combined.
  • Next, add the apples, pecans, and cranberries, and fold these into the mixture.
  • Transfer the batter to the prepared pan and hit it against the platform to make it even. Set aside.
  • Make the topping. In a small bowl, add the brown sugar, flour, and apple pie spice. Add the butter and mix well. The mixture should be coarse and crumbly. Add the pecans and mix well. Spoon the topping onto the batter in the pan.
  • Bake for about an hour. The exact time will depend on the machine you're using. You’ll know it's done when a toothpick inserted in the middle comes out clean.
  • Let it cool on a wire rack. Then remove from pan and let it cool completely.
  • Wrap with plastic wrap and store overnight at room temperature. This step isn’t mandatory but the bread will taste better if it has had a chance to sit out since the flavors will have time to meld more thoroughly into each other.
  • The next morning, slice and serve with a scoop of ice cream or a dollop of whipped cream.

Notes, tips and tricks:

  • For the bread, use unsalted butter. Add the salt pinch since that brings out the flavor of the apples and other ingredients.
  • Make sure the butter is at room temperature. If you use cold butter it won't mix in properly with the other ingredients and there’s a chance it will be lumpy. But on the other hand, if you melt the butter before using it, the resultant mixture will be too runny. So you want naturally softened butter. This will happen if it has been sitting out at room temperature for some time. So let it sit before you start the baking process.
  • The eggs should also be at room temperature for the best texture.
  • If you're using especially juice apples, there might be a good deal of liquid left over after grating the apples. Lightly squeeze the grated apples and use only the apples, not the liquid.
  • If you don't have pecans and cranberries, you can also use walnuts and raisins. Or you can skip the toppings altogether. It depends on how eclectic you want your bread to be. Make sure whatever you add has a flavor that will complement the natural sweetness of the apples.
