It's important to check their doneness with a toothpick or cake tester, as gluten-free cakes may need up to 30 additional minutes of baking. Oven temperatures can also vary between kitchens, so using an oven thermometer is recommended. Place cakes in the center of a preheated oven for even baking.

Gluten-Free Vanilla Cake

Ingredients:

  • 1 1/2 cups brown rice flour (you can also use almond flour)
  • 1/2 cup potato starch or arrowroot starch
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup oil (can use coconut or vegetable oil)
  • 1 cup milk of your choice (almond, coconut or oat milk works well) 
  • 1 teaspoon vanilla extract 

Instructions:

  • Preheat the oven to 180°C. Grease an 8-inch round cake pan with oil, and dust with rice flour. 
  • In a large bowl, whisk together the brown rice flour, potato starch, sugar, baking powder and salt. 
  • In a separate bowl, whisk the oil, milk and vanilla extract. 
  • Pour the wet ingredients into the dry and stir just until combined. Do not overmix. 
  • Pour the batter into the prepared pan. 
  • Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. 
  • Allow to cool completely before using gluten-free frosting.

You can do without the frosting, but we recommend it for a birthday cake, as frosting will make it even more delicious and festive for the occasion of a birthday.
