This recipe will yield you 12 vegan peanut butter cups that are fantastic and delicious. Make them the next time you host your kid’s birthday and delight your young guests.
A rich chocolate shell containing a smooth, creamy filling sounds delicious, right? The contrast between the crunch of the chocolate and the creaminess of the filling makes for an irresistible indulgence. This recipe is ideal for parties and as gifts. By using dairy-free chocolate and peanut butter you can enjoy this vegan dessert while still following your plant-based lifestyle. Here are a few notes and tips you should keep in mind before you start:
- Tempering melted chocolate ensures it sets with a beautiful sheen and a satisfying snap. Any leftover chocolate can be tempered again later.
- Use natural peanut butter for a healthier option, ensuring it has no added sugar or oils.
- For a smoother filling, allow the peanut butter to come to room temperature before mixing.
- Clean the rims of the chocolate cups after filling for a neat presentation.
- Store your finished peanut butter cups in a cool, dry place to maintain their shape and texture.
Ingredients
- 450 gm dairy-free semisweet or bittersweet chocolate, tempered
- 170 gm dairy-free semisweet or bittersweet chocolate, coarsely chopped
- 480 gm smooth peanut butter (ensure it’s vegan or follow the recipe to see how you can make it at home)
- 12 paper cups
Directions
- Using scissors, cut the paper cups to a height of 3.75 cm (1.5 inches). Line a baking sheet with wax paper and set a wire rack on top. Working with one paper cup at a time, fill the cup with tempered dairy-free chocolate. Hold the cup upside down, tap gently, and let the excess chocolate drip back into the bowl. Scrape the rim of the cup against the rim of the bowl to create a neat edge, then place the cup upside down on the rack. Repeat this process to make 12 chocolate cups. Allow the cups to stand for at least five minutes to firm up.
- Using a sharp knife, scrape the cup rims to create clean, straight edges; this will also make the cups easier to unmold. Turn the cups right side up and refrigerate for 10 minutes. Carefully peel the paper off the chocolate cups. Set the cups right side up on a platter and store them in a cool place.
- In a medium stainless-steel bowl set over a pan of barely simmering water, melt the chopped dairy-free chocolate, stirring occasionally. Remove the bowl from the pan, wipe the bottom dry, and stir the chocolate until smooth. Let it cool to warm room temperature. Add the peanut butter and stir with a wooden spoon until thoroughly blended.
- Spoon the peanut butter and chocolate filling into a sturdy resealable plastic bag and press it to one side at the bottom of the bag. Snip off the tip of one corner. Pipe the peanut butter and chocolate filling into the chocolate cups until it almost reaches the rims. Tap the filled cups lightly against the platter to release any air bubbles. Let the peanut butter cups stand in a cool, dry place for about 1 hour, or until set. The filling will be soft and creamy, but it will still hold its shape.
You could make peanut butter at home too. Making vegan peanut butter at home is a straightforward and rewarding process that allows you to enjoy a delicious spread tailored to your taste. Start by selecting raw, unsalted peanuts, which provide a neutral base, letting you control the flavor and saltiness. If you prefer a richer taste, roasting the peanuts is a great option. Preheat your oven to 175°C and spread the raw peanuts on a baking sheet. Roast them for about 10-15 minutes, stirring occasionally until they turn golden brown and fragrant.
Let the peanuts cool for a few minutes before transferring them to a food processor. Begin blending at medium speed; initially, the peanuts will crumble before clumping together. Continue processing for about three to five minutes until you achieve a thick paste. If you desire a creamier texture, add a teaspoon of neutral oil, such as peanut or coconut oil, to help smooth it out.
At this stage, you can enhance the flavor by adding a pinch of salt, a teaspoon of maple syrup for sweetness, or even a dash of cinnamon or vanilla extract for a delightful twist. Once you reach your desired consistency and flavor, transfer the peanut butter to a clean, airtight container. It can be stored in the refrigerator for up to a month or at room temperature for about two weeks, depending on your kitchen's temperature and humidity.
