  • 251 gm flour
  • 202 gm sugar
  • 103 gm butter
  • 3 eggs
  • 1 tsp vanilla extract
  • 121 ml milk
  • 302 gm cream
  • 153 gm sugar
  • 4 egg yolks
  • 2 tsp vanilla extract
  • 101 gm sugar

Method:

  1. First, you have to preheat the oven to 180°C.
  2. You are going to grease 2 round cake pans, and line the bottoms of pans with parchment paper.
  3. In a medium bowl, you have to whisk together flour, sugar and baking powder, and stir until well combined.
  4. In a large mixing bowl, using an electric mixer, you have to beat unsalted butter until creamy.
  5. While beating the butter, you can add eggs one at a time, beating well after each addition.
  6. You can gradually add the dry ingredients to the butter mixture, alternating with milk, and beat until combined.
  7. Next, you have to add vanilla extract, and mix well.
  8. You can divide the batter into the prepared pans.
  9. You have to bake them for 25 to 30 minutes.
  10. Once you remove the cakes from the oven, you need to let them cool in the pans for 5 minutes.
  11. Then, you will transfer them to a wire rack to cool completely.
  12. For the creme brulee filling, you can combine heavy cream, sugar, and vanilla extract, and cook over medium heat, stirring constantly, until the sugar has dissolved and the mixture is hot but not boiling.
  13. In a small bowl, you will whisk egg yolks together, and gradually add in the hot cream mixture, stirring constantly so that the eggs don't scramble.
  14. You can put the mixture back into the saucepan and cook over low heat, stirring constantly, till the mixture thickens and coats the back of a spoon.
  15. Then, you will take the mixture off the heat, and let it cool to room temperature.
  16. In order to assemble the cake, you are going to put one of the cooled cakes on a serving plate, and spread a layer of the creme brulee filling over the cake.
  17. After that, you will place the second cake on top of the first cake, and frost the top and sides of the cake with the remaining filling.
  18. Next, you will top the cake with an even spread of sugar topping.
  19. To caramelize the sugar, you will have to use a kitchen torch until the sugar caramelizes to golden brown.
  20. You can then serve the cake immediately, and enjoy it.
