Method:

  1. First you have to preheat the oven to 180°C.
  2. You are going to grease a springform pan, and line the bottom with parchment paper.
  3. In a medium bowl, start by combining rolled oats, brown sugar, and granulated sugar, and then mix in cold, unsalted butter with the crumb mixture until crumbs form.
  4. Then, you can spread half of the crumb mixture over the prepared pan and bake for about 15 to 20 minutes until it slightly browns.
  5. Using an electric mixer, you have to beat cream cheese until it is smooth, and then you have to gradually add sugar, and continue to beat until all the sugar is dissolved.
  6. Next, you can beat in eggs, one at a time, followed by sour cream and vanilla extract.
  7. Now, you have to pour the cheesecake batter into the prepared pan over the baked crumble crust and smooth out the top.
  8. Then, you can sprinkle the remaining crumble mixture over the cheesecake batter, and bake until the cheesecake is set and the crumble top is golden brown. This will take about 40 to 45 minutes.
  9. Next, you can remove the cheesecake from the oven, and let it cool in the pan for 1.5 hours.
  10. Then, you can transfer it to a wire rack to cool completely.
  11. Now, you can put mixed berries, sugar and water in a small saucepan, and cook over medium heat, stirring constantly, until the sugar dissolves and the berries are well crushed.
  12. After that, you can bring the mixture to a boil, reduce heat to medium-low and let it simmer for 5 to 7 minutes, till the compote has slightly thickened.
  13. Then, you can let the compote cool down to room temperature.
  14. After that, once you have allowed the cooled cheesecake to cool completely, you are going to place it on a serving plate to assemble. For this, you have to spoon the berry compote over on the top of the cheesecake.
  15. Finally, you can serve the cheesecake, and dig in.
