How To Make Blueberry Layer Cakes

Blueberry layer cakes are perfect for any occasion, this cake combines the moist and fluffy texture of vanilla or lemon cake with a fresh blueberry filling that pops with flavor.

Ingredients:

For the cake:

  • 2 cups flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 tbsp lemon zest

For the blueberry filling:

  • 1 ½ cups fresh blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

For the frosting:

  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Method:

  1. Preheat the oven to 180°C (350°F) and grease and line two 9-inch cake pans with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda and salt. In a separate bowl, beat the butter and sugar until creamy.
  3. Add eggs one at a time, then stir in the vanilla extract and lemon zest.
  4. Add dry ingredients to the butter mixture, alternating with buttermilk. Start and end with dry ingredients. Mix until smooth.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cakes cool completely.
  6. In a saucepan, combine blueberries, sugar and lemon juice. Cook over medium heat, stirring occasionally.
  7. In a small bowl, mix cornstarch and water until smooth. Add to blueberries and cook until thickened. Let cool.
  8. Beat heavy cream and powdered sugar and vanilla until stiff peaks form.
  9. Once cakes are cool, place the first cake on a serving plate. Spread a layer of blueberry filling on top, then a layer of frosting.
  10. Place the second cake on top and frost the entire cake. Top with fresh blueberries or additional lemon zest.
  11. Refrigerate for 30 minutes to set the frosting then slice and serve.
