- 120 gm brown sugar
- 2 eggs

- 1 tsp vanilla extract
- 93 gm all-purpose flour
- 129 gm + 72 gm rolled oats
- 1/4 tsp salt
- 1 tsp baking soda
- 73 gm brown sugar
- 2 tbsp butter (melted)
- 2 tbsp walnuts (chopped)
- ½ tsp ground cinnamon
Instructions
- Mix flour, 129 gm oats, salt and baking soda.
- In a bowl, beat butter and brown sugar till it turns creamy. Separately, combine eggs, banana and vanilla and then beat the flour mixture into the banana mixture. Pour the batter into a cake pan.
- Mix 72 gm oats, 73 gm brown sugar, 2 tbsp melted butter, walnuts and ground cinnamon until crumbly. Sprinkle it on top of the batter.
- Bake the cake in a preheated oven (175°C) for 40-45 minutes.
- Let the cake cool completely before serving.

Raspberry Oatmeal Cookie Bars

- 125 gm all purpose flour
- 81 gm rolled oats

- 93 gm all purpose flour
- 165 gm brown sugar

- 65 gm rolled oats
For the filling:
- 5-6 large apples (firm, crisp)
- 1 tbsp lemon juice
- 73 gm brown sugar
- ½ tsp ground cinnamon
Instructions
- Preheat your oven to 176°C. Grease a baking dish with butter.
- In a food processor, combine flour, 165 gm brown sugar, salt and butter and pulse until the mixture clumps together. Add oats and pulse thoroughly.
- Peel, core and thinly slice the apples. In a bowl, toss the apples with lemon juice to keep them from turning brown. Add 73 gm brown sugar and cinnamon and give it another toss.
- Transfer the apple mixture to the baking dish. Evenly top with the crumb mixture.
- Bake for 40-50 minutes. The top should look brown and crisp.
- Your apple crisp is ready to be served!
Oatmeal Brownies
This fiber-packed oat dessert is soft, fudgy and filled with explosions of chocolate.
Ingredients:
- 88 gm + 2 tbsp oat flour
- 100 gm Cadbury cocoa powder
- ¼ tsp salt
- 125 gm peanut butter (smooth and creamy)
- 177 ml coconut oil
- 157 ml maple syrup
- 200 gm granulated sugar
- 4 large eggs
- 170-340 gm chocolate (chopped up)
Instructions
- Preheat your oven to 180°C. Line a baking pan with parchment paper.
- In a bowl, mix oat flour, cocoa powder and salt.
- In a separate bowl, whisk peanut butter, maple syrup, coconut oil and sugar until combined. Then add eggs and whisk well.
- Combine the wet and dry ingredients. Fold in the chopped-up chocolate and transfer the brownie batter into the pan.
