1. Mini Unicorn Cheesecake Bites

  • 200 gm digestive biscuits
  • 100 gm unsalted butter, melted
  • 300 gm cream cheese
  • 120 gm powdered sugar
  • 200 ml heavy cream
  • 5 ml vanilla extract
  • Food coloring (pink, purple, blue)
  • Edible glitter and stars for decoration

Procedure:

  1. Crush your digestive biscuits into a fine crumb (you can use a food processor or the old-fashioned whacking-with-a-rolling-pin method). Combine with melted butter and press the mixture into the bottom of a lined muffin tin. Pop it in the fridge to chill.
  2. In a large bowl, beat the cream cheese and powdered sugar together until smooth. It should resemble fluffy clouds of joy at this point. Add vanilla extract and heavy cream, then continue to beat until stiff peaks form. The mixture should look like something straight out of a dreamy, sugary wonderland.
  3. Divide the mixture into three bowls and tint each with your food coloring. Swirls of pink, purple, and blue, and a dash of sprinkle for some magical effect. You can channel your inner unicorn spirit for this step.
  4. Spoon a little of each colored cheesecake filling onto the chilled biscuit bases. Use a toothpick or a skewer to swirl the colors together to create a magical marbled effect. If this step doesn’t make you feel like a dessert wizard, nothing will.
  5. Let the cheesecakes sit in the fridge for at least 4 hours or overnight. The waiting is tough but worth it!
  6. Sprinkle edible glitter and stars before serving. These mini unicorn cheesecakes are not only cute but will make you the unofficial ruler of all things mystical and delicious.

2. Panda Panna Cotta Cups

Here are some fun desserts to flaunt besides the Black Forest Birthday Cake. Suppose you’re arranging an animal-themed party for a kid, these panda panna cotta cups will be quite an adorable addition to the menu.

Ingredients:

  • 400 ml heavy cream
  • 100 ml whole milk
  • 75 gm granulated sugar
  • 10 ml vanilla extract
  • 10 gm gelatin powder
  • 50 ml cold water
  • 100 gm black sesame seeds (for decoration)
  • Black food gel (for panda face)

Procedure:

  1. In a small bowl, sprinkle gelatin over the cold water and let it bloom (sounds fancy, but it just means to let it sit until it looks like squishy jelly).
  2. In a saucepan, combine heavy cream, milk, and sugar. Heat it gently, stirring until the sugar dissolves, but don’t let it boil! You’re aiming for a “hugs-from-a-grandmother” kind of warmth here.
  3. Once your cream mixture is heated through, remove from the stove. Stir in the bloomed gelatin until it’s fully dissolved, then add vanilla extract.
  4. Pour the creamy mixture into cute little glasses or bowls and refrigerate for at least four hours. You want them to jiggle slightly but still hold their shape. Imagine the panda's belly—a little soft but still intact.
  5. Once the panna cotta has set, it’s time to bring your panda to life. Sprinkle crushed black sesame seeds around the edges for that panda head shape. Using black food gel, draw two little ears, eyes, and a cute panda nose right on top of the panna cotta. Voila! Your panda panna cotta is ready to be devoured.

3. Fruity Fox Tarts

Craving some tarts? Here is an exciting recipe to follow other than the usual Oreo Pop Up Tarts that will be wonderful for a quick snack.

Ingredients:

  • 200 gm all-purpose flour
  • 100 gm cold butter, cubed
  • 50 gm powdered sugar
  • 1 egg yolk
  • 2 tbsp ice-cold water
  • 200 ml whipped cream
  • 100 gm fresh strawberries (sliced for fox ears)
  • 50 gm blueberries (for fox eyes and nose)
  • 2 tbsp honey (for sweetness)

Procedure:

  1. In a bowl, mix flour and powdered sugar. Rub in the cold butter with your fingertips until the mixture resembles breadcrumbs. Stir in the egg yolk and add ice-cold water a little at a time to form a dough. Wrap and chill in the fridge for 30 minutes.
  2. Roll out the dough to about 1/4-inch thick and cut into small round circles to fit into a muffin tray or tartlet pans. Press the dough into the molds and poke a few holes at the base with a fork. Bake at 180°C for about 15-20 minutes until golden. Let them cool.
  3. While the tart shells are cooling, whip your cream until it forms soft peaks. You can add a dash of honey here for extra sweetness.
  4. Once the tart shells have cooled, spoon in the whipped cream. Place two strawberry slices as "fox ears" on top of each tart. Use blueberries to create the fox’s nose and eyes. Your fruity fox tarts are complete, and they are almost too cute to eat.
