1. Classic Whipped Cream Parfait
Whipped cream is not the prime ingredient for just Chocolate Mousse. This parfait will prove that.
Ingredients:
- 250 ml whipping cream
- 30 gm granulated sugar
- 5 ml vanilla extract
- 200 gm fresh berries (strawberries, blueberries, raspberries)
- 100 gm granola
Instructions:
- Place your mixing bowl and beaters in the fridge for about 15 minutes. Cold tools make whipping cream even fluffier.
- Pour the 250 ml of whipping cream into your chilled bowl. Using an electric mixer, start beating at medium speed. When the cream begins to thicken, gradually add 30 gm of granulated sugar and 1 tsp of vanilla extract. Continue whipping until stiff peaks form. This means when you lift the beaters out, the cream should hold its shape but still be soft and billowy.
- Grab your favorite glass or dessert dish. Begin with a layer of granola, followed by a generous scoop of whipped cream. Add a layer of fresh berries on top. Repeat the layers until your dish is filled, finishing with a dollop of whipped cream and a few berries for a stunning presentation.

2. Chocolate Mousse with a Creamy Twist

Ingredients:
- 200 gm Bournville dark chocolate, chopped
- 3 large eggs, separated
- 50 gm granulated sugar
- 250 ml whipping cream
- 15 ml coffee liqueur (optional, but fabulous)
- A pinch of sea salt
Instructions:
- In a heatproof bowl over a pot of simmering water (double boiler style), melt 200 gm of chopped dark chocolate. Stir occasionally until smooth and shiny. Let it cool slightly.
- In a separate bowl, whisk the 3 egg yolks with 25 gm of sugar until the mixture is thick and pale. Gently fold in the melted chocolate and a pinch of sea salt. If you’re feeling extra, add 1 tbsp of coffee liqueur for a mocha kick.
- In another bowl, beat 250 ml of whipping cream until soft peaks form. Carefully fold the whipped cream into the chocolate mixture, making sure to retain as much air as possible for a light, airy mousse.
- In a clean bowl, whip the 3 egg whites until soft peaks form. Gradually add the remaining 25 gm of sugar and continue whipping until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture, being cautious not to deflate the mousse.
- Spoon the mousse into serving glasses or bowls and chill in the fridge for at least two hours. Garnish with a sprinkle of cocoa powder or fresh berries before serving.
3. Strawberry Shortcake Cups
Now you can also have shortcakes in cups, and not just Chocolate Pudding.
Ingredients:
- 300 gm fresh strawberries, hulled and sliced
- 30 gm granulated sugar (for strawberries)
- 200 gm shortcake cookies or sponge cake, crumbled
- 250 ml whipping cream
- 30 gm powdered sugar
- 5 ml vanilla extract
Instructions:
- Toss the sliced strawberries with 30 gm of granulated sugar. Let them sit for about 30 minutes to release their juices and become a sweet, juicy topping.
- Beat 250 ml of whipping cream with 30 gm of powdered sugar and 1 tsp of vanilla extract until soft peaks form. The cream should be sweet and fluffy, perfect for dolloping.
- In your dessert cups or bowls, layer crumbled shortcake cookies or sponge cake, followed by a generous helping of strawberries (with their luscious juice), and then a dollop of whipped cream. Repeat the layers until your cups are filled with layers of heaven.
Allow the cups to chill in the fridge for at least an hour. This lets the flavors meld together, making every bite a blissful balance of creamy, fruity, and crumbly goodness.
