Wondering how to celebrate friendship day? Baking this rainbow cake

Baking is one of those super fun activities that becomes even more exciting when you’re doing it with a friend. You can even make a day of it. Go out shopping to get all the supplies and ingredients, come home, freshen up and take everything to the kitchen. Put on some fun music, bring out your bowls, mixers and other tech, and get to baking. And at the end of it, enjoy a delicious cake! It’s going to be a memory you’ll will cherish forever. 

So here’s a detailed recipe to make a rainbow cake, which is similar to the Cadbury Chocolate Cake. Bring some colour into your life and make this friendship day special. Ingredients:

For the rainbow cake layers:

  • 600 gm all-purpose flour
  • 600 gm granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 6 large eggs, at room temperature
  • 360 ml vegetable oil
  • 360 ml whole milk
  • 1 tablespoon vanilla extract
  • Food coloring (red, yellow, blue, green)

For the buttercream:

  • 565 gm unsalted butter, softened
  • ½ teaspoon salt
  • 1200 gm confectioners’ sugar
  • 120 ml cream, room temperature
  • 2 teaspoons vanilla extract

Directions:

  • Preheat the oven to 350°F/177°C.
  • Grease two cake pans and line with parchment paper. Set aside.
  • In a bowl, add the flour, sugar, baking powder, baking soda and salt. Mix well and set aside.
  • In another bowl, add the eggs, oil, milk and vanilla. Whisk until well combined. 
  • Now little by little, pour the wet ingredients into the flour mixture. First add some of it in, mix that, then add more. In this way, combine all the ingredients.
  • Divide the batter into six bowls. Add a different color to each of the bowls, making red, orange, yellow, green, blue and purple batters.
  • Pour one color batter into one pan and same with the second. Bake these, then repeat with the next two and then the last two colors.
  • Bake for about 20 minutes. The exact time will depend on the machine you're using. You’ll know it's done when a toothpick inserted in the middle comes out clean.
  • Let the cakes cool on a wire rack while the other two bake, and so on.
  • While the cakes are baking, prepare the buttercream.
  • In a bowl, add butter and salt and beat with a handheld mixer or a stand mixer with a whisk attachment. Beat until the butter is fluffy and pale. Then add the sugar and cream. Scrape down the sides of the bowl and drop it back into the middle so that the buttercream is whisked evenly. Then add the vanilla and beat that in too. The buttercream should be light and fluffy.
  • Now it's time to assemble. Place one color, preferably purple, on the cake stand or serving plate. Top with an even layer of frosting. Then add the blue layer on top, and then more frosting. Repeat with green, yellow, orange and red. Then spread the remaining frosting all over the cake layers and the sides.
  • Place in the fridge for an hour so it can all set.
  • Slice and serve.

Notes, tips and tricks:

  • When making the frosting, make sure you use naturally softened butter to cream. If the butter is cold, it will be solid and hard to beat into a properly fluffy texture. If you try to heat the cold butter, it will melt and become runny. So it's best to let the butter sit at room temperature and soften naturally before using.
  • If the frosting has a grainy texture, add more cream.
  • Let the cakes cool completely before you top them with the buttercream. If you add frosting to the hot cake, it will melt and become runny.
  • When assembling, if the cakes are domed on top, use a knife to scrape that off so that each layer of cake is even and flat. This way the layers will be able to hold each in a sturdy manner.
  • Leftover cake can be stored in the fridge for about five days.
