Waffles are a versatile and delicious food that can be enjoyed as both breakfast and dessert. There are some places, like the US, where it's more common to see waffles for breakfast. But the world over, the dish can be enjoyed as either. Waffles are a deeply versatile dish, which can be sweet or savory. When sweet, they can be plain or one can add things like chocolate chips to the batter. Remember that you will need special equipment, namely the waffle-making machine, to make this dish and pay special attention to the toppings. They play a large part in deciding whether the waffles are breakfast or dessert. We’ll discuss that in more detail in the notes. Ingredients:
- 270 gm all-purpose flour
- 50 gm granulated sugar
- 1 tablespoon baking powder
- ¾ teaspoon salt
- 480 ml milk
- 120 gm unsalted butter, melted
- 2 large eggs
- 2 teaspoons vanilla extract
Directions:
- Preheat the waffle maker.
- In a bowl, sift in the flour, sugar, baking powder and salt. Mix well and set aside.
- In another bowl, add the milk, butter, eggs and vanilla extract. Whisk until well mixed.
- Slowly add the dry ingredients to the bowl with the wet ingredients. Add one to two spoons, mix it in until thoroughly incorporated, then add another spoon or two. In this way, mix in all the dry ingredients, a little bit at a time. Make sure the batter has no lumps.
- Grease the waffle maker with butter.
- Pour the batter into the hot machine.
- Let it cook until golden brown. Then carefully remove and place on a wire rack to cool.
- Add any toppings of your choice and serve warm or cool.
Notes, tips and tricks:
- Make sure the eggs are at room temperature. They will mix in with the rest of the batter best at this temperature.
- The butter also needs to be room temperature. It will be tough and won't mix in properly if it's too cold. There will be lumps from where it is solid. If you melt cold butter it will become liquidy and the batter will be too runny. So it's best to use room-temperature butter. This will require some preplanning. Let the butter sit out at room temperature for at least an hour before mixing the batter.
- It's best to use unsalted butter. If you don't have that, you can use salted butter too, but then skip the additional pinch of salt. But it's better to use unsalted butter and then add the salt pinch since the salt really helps bring out the other flavors in the dish.
- Mix the batter until everything is thoroughly incorporated and there are no lumps. But do not overmix or the waffles won’t be as fluffy.
- After the first batch of waffles has heated up and removed, let the waffle maker sit and heat again before pouring in more batter. The waffle maker needs to be completely hot for crisp waffles.
- Leftover waffles can be stored in an airtight container in the fridge for about three days. They can also be frozen for up to two months. Place parchment paper between each waffle before freezing so it won't stick to each other.
- You can top with a variety of different items. If you’re eating it as breakfast, you can add honey or maple syrup, a sprinkling of cocoa powder, icing sugar or cinnamon, a dollop of butter or fresh fruit like berries, sliced bananas, and so on. If you’re serving waffles as a dessert, think of more decadent toppings. This could mean a chocolate or caramel sauce, a butter like almond butter or peanut butter or a jam or fruit compote. You can also top it with chopped nuts. Other options include brownie crumbs, cookie bits or other decadent toppings. There are also the classics like a dollop of whipped cream or a scoop of vanilla ice cream.
