Tempering eggs basically means gradually combining cold beaten eggs with a hot liquid to get a silky and thick texture. Here is a foolproof guide to master it.
Firstly, crack the raw eggs in a mixing bowl. Then whisk them together.
Add in hot liquid to the bowl and gradually stream the hot liquid to the eggs. Remember to whisk the eggs slowly.
You can keep the mixing bowl of eggs on a dishtowel to stop it from moving while whisking.
Check the temperature. Use your finger to touch the egg mixture and if it’s warm, you can add the mixture into the hot liquid.
After combined well, make sure to scrape the sides and bottom of the whisking bowl.
Strain through a strainer and finally, it is ready to use.
