4 egg whites
1 cup sugar
1 tsp vinegar
1 tsp vanilla extract
2 tsp cornstarch
1 cup heavy cream
1 tbsp powdered sugar
1 cup mixed berries (strawberries, raspberries, blueberries)
1/4 cup berry jam or coulis (optional for extra flavor)
Set oven temperature to 300°F, or 150°C.
When soft peaks begin to develop in the egg whites, gently add the sugar and continue beating until firm peaks do.
Spread the meringue onto parchment paper into a circle and fold in the vinegar, vanilla, and cornstarch. Allow it to cool fully in the oven after baking for 60 to 75 minutes.
For added taste, stir in berry jam or coulis after whipping the cream with powdered sugar until soft peaks form. Add fresh mixed berries and whipped cream to the top of the pavlova.
