1 ½ cups all-purpose flour (maida)
a pinch of salt
¼ teaspoon turmeric powder
2 tablespoons oil or ghee
water for kneading
1 cup chana dal
1 cup grated jaggery
½ teaspoon cardamom powder
1 tablespoon ghee
Mix flour, salt, and turmeric powder in a bowl. Add oil or ghee and gradually add water to make the soft dough. Cover it with a damp cloth and let it rest.
Wash chana dal and cook it in a pressure cooker until soft. Once cooked, cool it down and grind it to a fine paste.
Melt jaggery in a pan with some water, and add ground dal paste, ghee, and cardamom powder. Mix well
Divide dough into small balls. Roll it into sheets and fill in the chana dal mixture. Seal it well and roll it to sheets. Repeat the same to make all bobbatlu.
Cook the prepared bobbatlu on a heated griddle with some ghee on both sides. Serve it hot.
