½ cup unsalted butter
½ cup brown sugar
¼ cup granulated sugar
1 egg
tsp vanilla extract
1 ½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
¾ cup chocolate chips
6 soft caramel candies, cut in half
Beat butter, brown sugar, and granulated sugar until it's creamy. Mix in egg and vanilla extract.
Sift in flour, baking soda, and salt until it's combined. Gently fold in chocolate chips.
Scoop cookie dough onto a lined baking sheet, flatten it a little and place a piece of caramel candy in the center. Wrap the dough around leaving no crevices.
Bake the cookies at 175°C for 10-12 minutes until they turn golden. Once baked, let cool and serve.
