For the Dough:
2 cups all-purpose flour (maida)
1/4 cup ghee
A pinch of salt
Water (as needed)
1 cup khoya (grated)
1/2 cup powdered sugar
1/4 cup mixed nuts (chopped)
1/2 tsp cardamom powder
Oil (for frying)
Combine the flour, ghee, and salt in a bowl. Stir in enough water to make a smooth dough. Give it a half-hour to rest.
Put the khoya, cardamom powder, nuts, and powdered sugar in a pan. Stir thoroughly and cook for 2 to 3 minutes. Let it cool.
Roll out the dough into tiny circles to shape the pirukiya. After centering a spoonful of the filling, fold the dough over, then seal the edges.
Deep-fry the pirukiyas until they turn golden brown.
