1 cup semolina (rava)
1 cup grated coconut
1/2 cup sugar
1/2 cup butter, softened
2 large eggs
1/2 cup milk
1 tsp baking powder
1/4 tsp cardamom powder
1/4 tsp vanilla extract
Grease a baking pan and preheat oven to 350°F (175°C).
Cream sugar and butter together. Add vanilla and eggs, beating well. Mix cardamom powder, baking powder, and semolina; add slowly to the butter mixture.
Once the batter is smooth, fold in the milk and the shredded coconut.
After pouring the batter into the pan, bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
