200g dried apricots
500ml milk
3 tbsp sugar (adjust to taste)
3 tbsp cornstarch
1 tsp vanilla extract
Chopped pistachios or almonds for garnish
After 30 minutes of soaking in warm water, mix the dried apricots into a homogeneous paste.
Heat 400ml of milk and sugar in a pot until they are heated. Stir the cornstarch into the pot after combining it with the remaining 100ml of milk to create a slurry.
Cook over medium heat, stirring constantly, until the pudding thickens, after adding the apricot paste.
Pour into serving glasses, stir in the vanilla extract, and allow to cool. Before serving, garnish with almonds or pistachios.
