200g dark chocolate
2 tbsp unsalted butter
3 large eggs
3 tbsp granulated sugar
½ cup (120ml) heavy cream
1 tsp vanilla extract
Pinch of salt
Melt dark chocolate and butter on a double boiler and stir until melted evenly.
Separate egg whites and yolks. Put egg yolks in a bowl with 2tbsp sugar and whip until creamy. Stir into melted chocolate with some vanilla extract.
Beat the egg whites in another bowl with 1tbsp sugar and a pinch of salt. Stop when you see stiff peaks.
Whip heavy cream until soft peaks appear. Fold whipped cream into chocolate mixture and then fold in egg whites carefully.
on the mousse into serving glasses and freeze for 2 hours before serving.
