1 box cake mix
3 ripe bananas, mashed
1/2 cup vegetable oil or melted coconut oil
1 cup water
2 teaspoon vanilla extract
1 pack (226 grams) of vegan cream cheese, softened
1/2 cup vegan butter, softened
3-4 cups powdered sugar
1 teaspoon vanilla extract
Preheat the oven to 350°F or 175°C and flour the 9x13-inch baking pan.
Mix the cake mix, mashed bananas, vegetable oil, water and 1 tsp vanilla extract in a bowl and fold in nuts or chocolate chips. Pour the batter into the baking pan and bake for 25-30 minutes.
Meanwhile, prepare the frosting by beating softened cream cheese and butter together to make it smooth and creamy. Gradually add powdered sugar and 1 tsp vanilla extract.
Once the cake is done, take it out and let it cool. Then spread a layer of cream cheese frosting with the cake to assemble the cake.
Decorate with chopped nuts or chocolate chips, slice and serve.
