2 cups full-fat milk powder
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 cup water
1/2 cup heavy cream
1/4 cup unsalted butter
1/2 teaspoon vanilla extract
Chopped nuts for garnish
Grease the square baking dish or tray with butter or ghee and set aside.
Make sugar syrup with sugar and water in a heavy-bottomed pan and make it thick enough that it forms a single strand when you rub a drop between your fingers.
In another pan, melt butter and add heavy cream. Stir well then add cocoa powder and stir until smooth.
Now slowly pour sugar syrup into the chocolate mixture and stir continuously. Cook the mixture over medium heat and stir continuously until it thickens and starts to leave the sides of the pan.
Add milk powder and combine well to leave no lumps. Cook until it gets a dough-like consistency. Add vanilla extract and mix well.
Once the mixture is thick, transfer it onto a greased pan and spread with a spatula. Sprinkle chopped nuts on the barfi and gently press it down. Set the barfi in the fridge, then slice and serve once it hardens.
