1 cup cooked rice (white or brown)
1 can (400ml) coconut milk
2 ripe bananas (mashed)
2 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
Pinch of salt
Optional: cinnamon or nutmeg for garnish
In a saucepan, mix cooked rice, coconut milk, mashed bananas, vanilla essence, and a touch of salt.
Cook over medium heat, stirring regularly, until the mixture thickens (10-15 minutes).
If you like it sweeter, add honey or maple syrup.
Serve warm or cold, topped with cinnamon or nutmeg.
