1 pack cake mix
1 cup water
1 large (2/3 cup) ripe banana, mashed
3 large eggs
3/4 cup coconut flakes
4 cups powdered sugar
1/2 cup softened butter
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup toasted coconut flakes
Preheat the oven to 350°F. Grease and flour 2 (9-inch) round cake pans.
Combine the cake mix, 1 cup water, and eggs in a large bowl. Beat it well and stir in the coconut.
Fill the cake pans evenly with the batter and bake for 30 to 35 minutes or until the toothpick inserted in the centre comes out clean. Remove the cake with a knife after cooling down.
In the meantime, prepare frosting by combining powdered sugar, butter, milk and vanilla extract in a bowl. Beat it at medium sped until creamy then add remaining powdered sugar and mix well.
Assemble the cake by layering it with frosting and decorate it with toasted coconut flakes. Let set in the fridge for 30 minutes and enjoy.
