1 ½ cups (180g) graham cracker crumbs
¼ cup (50g) granulated sugar
6 + 2 tbsp (85g + 30g) unsalted butter, melted
8 Oreo cookies, crushed
2 tbsp (30g) brown sugar
3 cups (450g) fresh or frozen blueberries
½ cup (100g) granulated sugar
2 tbsp cornstarch
1 tbsp lemon juice
1 tsp lemon zest
½ tsp cinnamon
1 tsp vanilla extract
Mix graham cracker crumbs, sugar, and melted butter. Press it at the bottom and along the sides of a pie pan. Chill to set.
Combine blueberries, sugar, cornstarch, lemon juice, lemon zest, cinnamon, and vanilla in a saucepan. Cook on medium and stir until mixture thickens. Let cool.
Mix crushed Oreo cookies with melted butter and brown sugar. Fill the filling in prepared crust and sprinkle Oreo crumble on top. Chill overnight and serve.
