1/2 cup butter, or oil
1 cup sugar, see note
1/2 cup unsweetened cocoa
2 large eggs
1 teaspoon vanilla
1/4 cup flour
1/4 tsp salt, leave out if using salted butter
1/2 cup chopped dark chocolate
Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
Melt butter in a saucepan, take it out in a bowl, then add sugar and cocoa powder and whisk until sugar is dissolved.
Add eggs one at a time and then add vanilla. Whisk for 1 minute until well combined.
Stir in flour and salt until well combined and be careful to not overmix. Fold in nuts, chocolate chips or dry fruits if you like.
Pour the batter into the lined baking pan and bake for 20 minutes until the centre is slightly set. Do not overbake.
Cool on a wire rack and cut to squares then serve.
