1 cup almond flour
2 tablespoons honey or maple syrup
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup unsweetened almond milk
1 large egg
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1/4 cup mini dark chocolate chips
Make pancake batter by mixing dry ingredients like almond flour, baking powder, baking soda, and salt in one bowl and almond milk, egg, melted coconut oil, honey, and vanilla in another bowl. Combine both the mix together and mix well.
Once the batter is formed, fold in chocolate chips gently.
Heat a non-stick pan and grease it with a little coconut oil or butter. Pour the batter into a heated pan measuring ¼ cup. Cook it until bubbles form on the surface.
Flip the pancake and cook for another 1-2 minutes until it's golden brown.
Remove the pancake from the pan and repeat the process for the whole batter. Once all the batter is finished, stack them up on a plate drizzle them with chocolate syrup, and garnish with fruits and nuts.
