1 cup unsalted butter
1 cup sugar
2 large eggs
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 tsp vanilla extract
Preheat the oven to 175°C/350°F.
Oil and dust an 8-inch circular cake pan.
Beat sugar and butter together until frothy and light.
Add the vanilla after beating in the eggs one at a time.
Mix the flour
baking powder
and salt in another bowl
Beginning and finishing with flour
add the dry ingredients to the butter mixture in alternating cycles with the milk.
After filling the pan
level the top with the batter.
A toothpick in the middle should come clean after baking for 30 to 35 minutes.
After 10 minutes of cooling in the pan
remove and place onto a wire rack to finish cooling.
