2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup brown sugar
3 ripe bananas
3 large eggs
1/2 cup vegetable oil
1 cup coconut milk
2 teaspoons vanilla extract
1 cup shredded coconut
1 cup crushed pineapple
1 cup diced mango
Step 1 - Prepare Preheat your oven to 350°F. Grease two 9-inch round cake pans.
Combine flour, baking powder, baking soda, and salt in a bowl.
Mix granulated sugar, brown sugar, and vegetable oil together then add mashed bananas and beat until smooth. Add eggs one by one and continue beating until well combined.
Combine wet and dry ingredients gradually and fold in shredded coconut, crushed pineapple, and diced mango.
Pour the batter into cake pans evenly and bake for 25-30 minutes in a preheated oven. Once baked, allow to cool on a wire rack.
Layer the cake with frosting made of sugar, butter, cream cheese, and coconut shreds. Decorate the cake with pieces of mango, pineapple and nuts.
Let it set in the fridge for 30 minutes and serve chilled.
