1 1/2 cups pitted dates
1 1/4 cups boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
3/4 cup brown sugar
2 large eggs
1 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 cup unsalted butter
1/2 cup brown sugar
1/2 cup heavy cream
1 tsp vanilla extract
Pinch of salt
Pour boiling water on chopped dates and add baking powder. Let sit for 10 minutes then mash.
Preheat oven to 175°C and grease ramekins. Cream butter and brown sugar then add eggs and beat well. Stir in vanilla, flour, baking powder, and salt. Add in date mixture.
Pour batter into ramekins and bake for 20-25 minutes.
Melt butter in a saucepan and add brown sugar with cream. Stir constantly and simmer for 2-3 minutes. Add vanilla and a pinch of salt.
Drizzle toffee sauce on baked pudding and serve with a scoop of vanilla ice cream.
