1/2 cup mashed ripe banana
1/2 cup grated zucchini
1/4 cup unsweetened applesauce
1/4 cup honey or maple syrup
1/4 cup melted coconut oil or vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/2 cup almond flour or oat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup dark chocolate chips (optional)
Preheat the oven to 350°F or 175°C and prepare the baking pan by lining it with parchment paper.
Combine mashed banana, grated zucchini, applesauce, honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
Whisk cocoa powder, almond flour, baking powder and salt. Now gradually stir in dry ingredients to the wet ingredients and avoid overmixing.
Fold in the chocolate chips and dry fruits, then pour the batter into the baking pan and spread it out evenly.
Bake the brownies for 20-25 minutes, remove from the oven and allow it to cool before cutting up.
Slice the brownies to squares serve and enjoy.
