1 cup graham cracker crumbs
2 tbsp melted butter
8 oz cream cheese
⅓ cup sugar
1 tsp vanilla extract
1 large egg
½ cup sour cream or coconut cream
Preheat oven to 163°C. Mix graham cracker crumbs, melted butter, and sugar then press it into muffin tin liners. Bake for 5-7 minutes.
Combine cream cheese, sugar, and vanilla and beat to a smooth miture. Add egg, sour cream and coconut cream and mix well.
Spoon cheesecake filling into muffin cups and even it out with spoon.
Bake cheesecake for 15-18 minutes and cool it off to serve.
