1 cup cooked brown rice 1 ½ cups coconut or almond milk 2 ripe bananas, mashed 1-2 tablespoons maple syrup 1 teaspoon vanilla extract 1 teaspoon chia seeds
Heat milk in a pan and add cooked rice. Cook on medium heat while stirring occasionally until mixture thickens.
Stir in mashed bananas and add vanilla extract, chia seeds, maple syrup, and cinnamon.
Simmer the mixture for 2-3 minutes while stirring.
Once done, cool the pudding and serve with toppings of your choice.
