1-litre full-fat milk
½ cup sugar (adjust to taste)
1 tsp cardamom powder
2 tbsp ghee
Chopped nuts (optional) for garnishing
In a heavy-bottomed pan over low heat
boil the milk
stirring often
until it reduces to a thick consistency (khoya).
When the mixture turns gritty and golden brown
add the ghee and continue to cook while stirring.
Add the cardamom powder and sugar
then simmer for a few more minutes until the mixture pulls away from the pan's sides.
Rolling pieces of the mixture between your palms will help you shape the peda into little discs.
Before serving
let them cool and sprinkle with nuts if preferred.
