1 cup millet flour
1 cup milk
1 large egg
2 tablespoons melted butter or oil
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
Use finely ground millet flour and sift it to remove lumps. Add sifted baking powder, baking soda, sugar and salt. Combine well.
In another bowl, combine milk, egg, melted butter, and vanilla and beat well.
Pour wet ingredients into the dry mix and stir well. Avoid overmixing, some lumps are good for fluffiness.
Set aside the batter for 5-10 minutes to let it hydrate and get fluffy. Adjust consistency of the batter by adding milk or flour.
Make pancakes with the batter on a nonstick pan and once done, stack them on a plate and serve.
