1 cup graham cracker crumbs (or crushed cookies)
2 tbsp melted butter
8 oz creamcheese, softened
¼ cup sugar
1 egg
1 tsp vanilla extract
Crumble graham crackers and mix with melted butter. Press this mixture firmly into cupcake liners and bake at 163C for 5 minutes.
Beat softened cream cheese, sugar, and vanilla until smooth. Add eggs in and combine well.
Fill the baked crusts with cream cheese mixture. Bake for 15-18 minutes then cool in the fridge for 10 minutes.
Decorate with your favorite toppings and serve.
