4 egg whites
1 cup superfine sugar
1 tsp white vinegar
1 tsp vanilla extract
2 tsp cornstarch
1 cup heavy whipping cream
1 tbsp powdered sugar
Mixed fresh fruits (berries, kiwi, passionfruit)
Set oven temperature to 300°F, or 150°C.
Add the sugar gradually while beating the egg whites until firm, glossy peaks form. Beat until soft peaks form. Whisk together the cornstarch, vinegar, and vanilla extract.
Shape the meringue into a circle with a small depression in the center by spreading it out onto a baking pan fitted with paper.
Remove from the oven and let it cool inside with the door slightly ajar after baking for 60 to 75 minutes, or until crisp.
Before soft peaks form, whip the cream with powdered sugar. Place whipped cream and fresh fruits on top of the chilled meringue to assemble the Pavlova.
