1 cup maida
¼ cup semolina
1 cup milk
¼ cup sugar
½ tsp cardamom powder
½ tsp fennel seeds
½ tsp baking powder
½ cup melted chocolate or chocolate chips
Oil or ghee for frying
½ cup sugar syrup
Mix maida, semolina, sugar, cardamom, fennel seeds, and baking powder. Add milk gradually and whisk to make smooth batter. Let rest.
Heat ghee in a pan and pour a ladle of batter. Place melted chocolate in the middle and cover with more batter. Fry on both sides.
Once malpua is fried, dip and soak in sugar syrup for a few seconds and drip off the excess.
Garnish malpua with chocolate drizzle and nuts. Serve warm.
