2 cups almond flour
1/2 cup wheat flour
1/2 cup cocoa powder
1 cup protein powderv2 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
1 + ½ cup almond milk
1 cup Greek yogurt
1/2 cup honey
2 tsp. vanilla extract
300 g dark chocolate
1.5 cups silken tofu
Preheat the oven to 180°C and flour 3 8-inch cake pans. Make a dry mix with almond flour, whole wheat flour, cocoa powder, protein powder, baking powder, baking soda, and salt.
Whisk almond milk, Greek yoghurt, honey, and vanilla for the wet mix. Combine the dry and wet mix to make the batter, and pour it evenly into baking pans.
Bake for 25–30 minutes, then remove and let cool. Make chocolate ganache with melted chocolate, hot cream, pureed tofu, and cocoa powder. Blend until smooth.
Level the cakes, then layer them with chocolate ganache. Decorate with berries and nuts, set in the fridge, and enjoy.
