1 1/2 cups all-purpose flour
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup almond milk
1/3 cup vegetable oil
1 tbsp. white vinegar
1 tsp. vanilla extract
200g dark chocolate, chopped
1 cup heavy cream
Preheat the oven to 180 °C. Line an 8-inch round cake pan.
Mix the dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt) in a bowl. Whisk almond milk, vegetable oil, vinegar, and vanilla extract in another bowl.
Combine the wet and dry ingredients until smooth. Pour the batter into the pan and bake for 30 minutes. Cool on a wire rack.
Melt chocolate over steam, mix with hot cream, and stir well to make ganache. Set aside.
Layer the cake with ganache and decorate it with nuts and fresh berries. Chill for 30 minutes, then slice and serve.
