4 large eggs, separated
1 cup sugar
1 1/2 cups all-purpose flour
1/4 cup whole milk
1 teaspoon vanilla extract
Pinch of salt
2 cups guava paste, softened
1/4 cup water
Powdered sugar for dusting
Combine guava paste and water in a saucepan and put on medium heat. Stir until the paste melts and becomes thick, like a spread but not too thick.
Preheat the oven to 350°F (180°C). Prepare 3 baking sheets by lining them with parchment paper and grease them with butter.
Beat egg yolks and sugar in a bowl until fluffy. Add milk gradually along with vanilla extract and mix well.
Sift in flour and salt and stir until smooth. In a different bowl, beat egg whites to stiff peaks and gently fold them in the batter.
Spread the batter onto the prepared baking sheet evenly and bake for 5-7 minutes until lightly golden.
Remove the cake from the oven and peel off the parchment paper. Spread the layer of melted guava paste and roll the cake over. Chill it to set it up and slice it up for serving.
