1/2 cup salted butter
1 cup brown sugar
2 eggs
1 1/2 tbsp vanilla extract
2 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 tbsp cornstarch
1 tsp baking soda
1/2 tsp salt
3/4 cup buttermilk
226 g cream cheese
1/4 cup salted butter, softened
4 cups powdered sugar
Preheat oven to 375°F and line a cookie sheet with parchment paper or a silicone mat.
In a mixer, combine partially melted butter and brown sugar. Add egg and vanilla, mixing well.
Slowly mix in flour, cocoa powder, cornstarch, baking soda, and salt, gradually adding buttermilk until a thick batter forms. Add red food colouring and mix.
Pipe or scoop the batter onto the baking sheet, making equal-sized circles. Bake for 8-10 minutes until cookies are set. Cool them down after taking out.
Make the filling by combining cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract. Pipe the filling onto the bottom of one cookie then top with another cookie.
Serve it right away or store it in airtight container.
