For the Muffins:
200 g all-purpose flour
100 g sugar
2 tsp baking powder
1/2 tsp ground cardamom
1/2 tsp ground cinnamon
1/4 tsp salt
120 ml milk
60 ml vegetable oil
1 large egg
1 tsp vanilla extract
150 g diced pear (about 1 medium pear)
For the Streusel Topping:
50 g all-purpose flour
25 g sugar
25 g cold butter
1/2 tsp ground cardamom
Line a muffin tray with paper liners and preheat to 180°C.
Gently mix the dry and wet ingredients, then fold in the diced pears.
Combine the streusel ingredients and crumble the butter. After spooning the batter into liners, top the muffin batter with streusel.
A toothpick should come out clean after 18 to 22 minutes of baking. Before serving, let it cool.
