4 medium-sized carrots, finely grated
2 cups Milk
2 tablespoons Ghee or Butter
3–4 tablespoons jaggery or brown sugar
1/2 teaspoon cardamom powder
1/4 cup almonds, cashews, or pistachios
Wash, peel and grate carrots. Heat ghee and add grated carrots. Saute for 5-6 minutes until softened.
Add milk and stir well. Reduce heat and simmer while stirring occasionally. Let milk reduce to half for 10 minutes.
Add sweetener and mix. Stir in cardamom powder for flavor.
Stir in chopped nuts. Cook for 3-4 minutes and serve warm.
