1 cup seedless dates
½ + ¼ cup brown sugar
1 cup water
½ tsp baking soda
¼ cup unsalted butter
1 large egg
¾ cup self-rising flour
¼ cup heavy cream
½ tsp vanilla extract
Soak dates in a mixture of boiling water and baking soda for 5 minutes.
Mix melted butter and brown sugar. Add egg and whisk until smooth. Now sift in self-rising flour and dates and mix well.
Pour batter into greased ramekins and microwave at high for 1-2 minutes or bake at 190°C for 10-12 minutes.
Heat cream, brown sugar, and vanilla in a saucepan and stir until it thickens. Drizzle the sauce on baked puddings and serve with a scoop of ice cream.
