1 cup black glutinous rice
4 cups water
1 cup coconut milk
1/2 cup sugar or jaggery
1/4 teaspoon salt
Rinse black rice and soak in water for 4-6 hours. Drain and set aside.
Cook rice in 4 cups of water in an open pan, stirring occasionally, until it's tender and sticky.
Once rice is cooked, combine it with coconut milk and sweetener and simmer for 10 more minutes.
Spoon black sticky rice pudding into bowls and garnish to serve.
