2 cups almond flour
1 cup full-fat coconut milk
1 cup granulated sugar
1/2 cup water
1/2 teaspoon ground cardamom
Chopped nuts for garnish
Grease the square dish with coconut oil and set aside.
Make sugar syrup by combining sugar and water. Enhance the flavour with rose water or cinnamon if you like. Heat and stir the syrup until it becomes thick.
Prepare almond mixture by combining almond flour and coconut milk. Stir well to leave no lumps. Cook the almond mixture until it thickens for 10-15 minutes approx.
Slowly pour the hot sugar syrup into the almond mixture and stir continuously. Add ground cardamom and cook over medium heat to make a thick mix.
Once it starts to leave the sides, immediately take it out on the greased pan and spread with a spatula evenly.
Garnish with chopped nuts and cool in the refrigerator, then slice it up and serve.
