50g basmati rice (soaked)
500ml full-fat milk (or almond milk)
2 tbsp unsweetened cocoa powder
5-6 dates (pitted and blended into a paste)
¼ tsp cardamom powder
15g mixed nuts (almonds, walnuts, pistachios, chopped)
1 tbsp ghee
Melt ghee in a pan, add soaked basmati rice, and sauté for a minute until lightly scented, making it tastier and better textured.
Add full-fat or almond milk, and bring to a boil. Let the rice simmer on low heat until creamily soft.
Add unsweetened cocoa powder, date paste, and cardamom, and stir constantly until well mixed and naturally sweet.
Garnish with chopped almonds, walnuts, and pistachios, and serve warm or chilled for a healthy but decadent Eid dessert.
